| PRESERVING THE FRESHNESS OF YOUR JERKY AFTER OPENING | OUR
JERKY HAS a shelf life of 18 months from the date of manufacture.
We recommend the jerky is consumed
within three days of opening—rarely a problem, especially with
all the help you’ll get. But you can do several things to preserve
the aromatic freshness of your jerky a bit longer—chief among
them is keeping the resealable pouch zipped between grabs and keeping
the
jerky
cool
by stashing in the ice chest or fridge (the idea is to preserve the
moisture content in the jerky). While refrigerated storage will help,
it won't make it last indefinitely. And keep your jerky out of direct
sunlight, which can cause sweating, leaching the moisture and taste
out of
the
meat. |

| DEALING WITH ALL THOSE JERKY MOOCHERS | IT
WILL HAPPEN: As soon as you rip open a bag of our soft, savory jerky,
setting free the smokehouse aroma, they begin to drift in, hoping for
a piece. Just one. A little one. What to do? Remember in grade
school, licking the spice cake so the moochers would leave it alone?
Okay, here are some more civilized ideas: 1—Take a second bag of our jerky and cut the slabs into smaller “shareable” nuggets and put them back in the resealable zip pouch the jerky came in. Then, practice that “you’re going to owe me” look and you’ll be ready for all comers. 2—Sell them their own bag (you can get it WHOLESALE as a member of JerkyDirect.) 3—Do all your jerky-eating on the dark side of the moon—or at least hidden quietly in a closet. |

| TROUBLE SHOOTING | NEED
TO REVIVE an opened bag of jerky that’s gotten a little tough? Not
a whole lot you can do...though sometimes putting it in the fridge
helps. Some have had luck with using bombardment of microwaves—say
ten seconds—warm and soften it up. You can also give
the tough stuff a second life by trying out one of the tips under
